2 T. non-hydrogenated margarine or olive oil
1 medium onion, diced
2 cloves garlic, minced
1 large or 2 smaller/medium potatoes, peeled and diced
Pinch of thyme (the dried kind)
1/2 t. salt
4 cups vegetable broth or seasoned water like I use
1 16 ounce package frozen broccoli
Melt butter and cook onions until translucent.
Add garlic, stirring constantly until fragrant, about 1 minute
Add potatoes, thyme, salt and broth/water
Simmer 10 minutes
Add broccoli
Cook 10 more minutes until potatoes are tender.
Puree in food processor in small batches all the soup is a smooth consistency.
Put it in a yellow bowl, if you have one.
Enjoy.
